This is the epitome of healthy comfort food: buffalo cauliflower over quinoa with vegan "bleu cheese" dressing and olive oil popcorn! (YES, popcorn!)
Buffalo Cauliflower with Quinoa (Vegan + GF)
Ingredients: 1 serving quinoa, cooked 1/3 head cauliflower, cut into small florets 2 cloves garlic, minced 1/2 tsp garlic powder Frank’s Red Hot Olive Oil Salt & Pepper 1 T Trader Joe’s Garlic Spread Dip 1 T Trader Joe’s Vegan Cream Cheese Almond Milk Popcorn
1. Mix garlic, garlic powder, 1.5 T Frank’s, 1 T olive oil, 1/4 tsp salt & 1/8 tsp pepper in a bowl. Toss cauliflower in sauce and spread onto cookie sheet. Roast at 400’ for 10 min, flip over, and roast for another 7-10 min. Broil for 1 minute to get it crispy if needed.
2. Meanwhile, make the vegan Bleu cheese dressing. Stir garlic spread and cream cheese together and add a tiny splash of almond milk to thin it out. Add some black pepper.
3. I made my popcorn on the stove in olive oil and tossed it with salt & pepper while it was hot.
4. Toss cauliflower in 1-2 more tablespoons Frank’s.
5. Assemble quinoa & cauliflower, drizzle on more Frank’s and the Bleu cheese dressing. Top with popcorn and some more black pepper. Enjoy!
