Here it is: your new go-to cheap, easy, healthy dinner! The best part about this type of recipe is that you can totally customize it with whatever you have in your kitchen and play around with toppings however you'd like. All of the ingredients on this plate are staples in my kitchen. With very little prep and cheap ingredients, this pretty dish packs a mean punch of spicy flavor!
This beauty is vegan and gluten free, but yours definitely doesn't have to be - this would be great with cheese, ground turkey, grilled chicken... This is a great time to experiment with ingredients and flavors without having to think too much or break the bank.
Spicy Stuffed Sweet Potato
Ingredients:
1 medium sweet potato
Olive oil
Salt & pepper
1/4 onion
1 clove garlic, minced
Ground cumin
Garlic powder
1/4 cup frozen corn (I'm obsessed with the frozen roasted corn from Trader Joe's)
1/4 cup refried beans (I used Trader Joe's salsa-style pinto refried beans)
Hot sauce (I used two kinds - one spicy taco sauce and one jalapeno)
Fresh limes
Method:
1. Preheat oven to 400 degrees F.
2. Wash and scrub sweet potato. With a fork, poke holes all over the potato. Rub with about 1.5 teaspoons olive oil, dash of salt, and some pepper. Wrap loosely in aluminum foil (seal tightly) and place on a cookie sheet in the oven for about 40 minutes, or until cooked through when pierced with fork.
3. Slice onion thinly. Heat a frying pan on med-high heat with about 1.5 teaspoons olive oil. Add the onions and cook until slightly charred. Reduce the heat to med-low and add the garlic, stirring and cooking until fragrant. Add salt, pepper, and the spices to taste. Lastly, toss in the frozen corn and combine. The corn will defrost quickly. Set aside.
4. Slice the sweet potato down the middle and slightly mash it so the surface lends itself well to adding toppings. Assemble your toppings: spread on refried beans, followed by the corn/onion mixture, sauces, and fresh lime juice. Feel free to peek in your cabinets or fridge for other toppings that would work well (crushed tortilla chips, pepitas, salsa...you name it!).
